To start off retopologising my base mesh, I decided to focus on the head as I knew this would be the trickiest part and would tend to have the most problems.
I used this handy tutorial to get started:

It helped massively when trying to get even flowing geometry around the head and hands. I also looked at other examples of good topology on 3D male models to cross reference and try and get the best result possible.
The base mesh that I previously mentioned by Bao Vu came in really helpful as it's free to download so I studied it to see how the geometry was distributed throughout the model.
I keep in mind that this base mesh will be subdivided multiple times, so that it is important that I keep it quaded so that there aren't any artifacts later on.
